Mini Egg Cups


I threw out some ideas for brunch this Sunday but none of them excited my fiancé’s attention.

I always love making coffee cake, cinnamon rolls… something sweet with cinnamon please! Like these cinnamon biscuit rolls or these cinnamon and sugar donut holes.

My fiancé is much more of a savory guy. So, per his request, I made these mini egg cups.

I can't remember where I first saw these, but they have been around the blogosphere for a while now. They are super easy to make and super yummy.

Here is how to make these. First grease a mini muffin tin. I lined the muffin tin with salami. This was the first time I used salami and it really added a nice touch, although they are just as yummy without.

Grease mini muffin tin and line with salami. Scramble eggs, minced garlic and milk. Grate cheddar cheese.
Fill the salami cups with scrambled eggs, then top them off with cheese.

Fill the salmi cups with egg mixture and top with cheese.
Preheat the oven for 425 degrees fahrenheit. Bake for roughly 20 minutes or until done.

Bake at 425 degrees fahrenheit for 20 minutes.
I served mine with tater tots and whole wheat toast. I think some sliced fruit would have made this the perfect brunch.

Yummy, savory, mini egg cups.

Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes

Yield: 2 dozen


Serving: 4 mini egg cups
Calories per serving: 240
Fat per serving: 19

Ingredients

  • Eggs
  • 1/2 teaspoon Minced Garlic
  • 1/2 teaspoon Black Pepper
  • 2 tablespoon Milk or Half and Half
  • 2 dozen Salami Slices
  • 1/2 cup Cheddar Cheese

Cooking Directions

  1. Preheat oven to 425 degrees fahrenheit.
  2. Grease mini muffin tin.
  3. Line mini muffin tin with salami.
  4. Scramble eggs, minced garlic, black pepper and milk (or half and half).
  5. Fill salami cups with egg mixture.
  6. Top with cheese.
  7. Bake for 20 minutes.
  8. Serve and enjoy!

My fiancé LOVES these mini egg cups. It is such a flexible, hard to mess up recipe. Some great alterations would be to add green onions or chives, bacon bits, red pepper flakes. Oh, yum!
